On the left side only ABC stands are unlocked and on the right only DEF stands are unlocked

The other jetway is used by the left C stand and is only unlocked when that stand is purchased.
I only have the DEF stand so they’re not showing.
You are right, though, that it should also connect for DEF planes since the 2 small stands are blocked anyway.

depending on when i get to Gru i might not add A380s to the airport unless i see one on flight radar land there, i might do X planes landing there but just doesnt look big enough for X
