:chart_increasing: Why should this aircraft be added?
The very first jetliner produced by Boeing and one of the earliest jetliners in general, this aircraft would certainly deserve to be brought back to life in the game, akin to the Comet or the Concorde.
It would also be a vital addition for the future Kai Tak project.
Its derivative B720 - Boeing 720 has already been suggested.

:airplane: Airlines that used it
The last airline to operate it in scheduled passenger service was Saha Airlines - retired in 2013 from passenger service and in 2019 from cargo service, making it a viable regular contract.
Other recent operators include LADE (Líneas Aéreas del Estado), Hewa Bora Airways, BETA Cargo or Libyan Airlines.
Throughout its long operational history, it was used by many airlines, some examples include Pan Am, TWA, Air France, Lufthansa, JAL, MEA, Varig or Qantas.

Quite an interesting read that I’ve stumbled across while looking for something completely different - airplane characteristics for airport planning for the 707 variants published by Boeing:
