Top Livery, however one thing is, that Edelweiss only has 1 A320 with Sharklets which has the special livery. Is it possible to remove the normal version with Sharklets?

Make a bug report for it, and the developers should make a note of it.
I always wondered that myself though, if it was only the special livery that had sharklets.
